The only real reason for protecting epoxy is against UV, which will degrade it quite quickly.

Any varnish or lacquer with UV inhibitors will work, even a relatively cheap single-pot exterior wood varnish. It will not last as long, but for a little-used boat will be adequate.Actually a little-used boat stored indoors would probably be good for a few years even without any UV protection.
