I asked about going with beveling the edges instead of T&G with my first kayak too. Beveling makes joints much simpler, especially when the curves start to get interesting. First boat was a Caspian Sea. I'm now getting readay to glass up a Great Auk. I left the strips cut with my table saw square-edged and beveled where needed with a block plane, by eye: no problems, despite making the deck curved, instead of the inverted straight "V" shape shown in Nick's book.
