Skin-on-Frame: Skinning with polyester question

Hi all. I'm skinning two new boats, and re-skinning two old boats. The old boats were covered in (I think) 13oz dyson ballistic nylon. It really seemed way overkill for my modest needs after several years of usage.

I was given 20yards of an 8oz polyester that i plan on using this time. My tests show that it is pretty puncture resistant (I couldn't get a flat head screw driver through it without a lot of work), and a quick heat gun test showed that it could shrink. I know use an iron if I shrink it. It seems to be a twill weave with only a tiny bit of stretch.

When I skinned the first two I used Corey's tutorial video's, but for the polyester my google seems to be failing. Should I just proceed the same way I did with the nylon, and assume that I'll get a lot less stretch, or should I be looking for a different technique. Is there a good online tutorial for skinning with poly?
