(I did it more to learn the skills for the next kayak I want to build) and I don't want to get into an elaborate fix. Any ideas?

Skeg won't correct it ,just tends to fix the back of the boat in the water so making it "track" better.You loose ability to spin or steer the boat as much as it was.
Put a long bead of wood along the keel line maybe then shave most of it off,maybe,or learn to live with it [and make another boat better.]Ocean is forgiving of these small construction deviations but not with other things!
