If you don't plan to use a sheer clamp:
IMO, there's no particular reason to join the hull and deck at (or just adjacent to) the sheer line on a boat with a 'curved' sheer cross-section, though this is a decision that needs to be made when you put the first strip on the forms.
It's actually easier to 'flex' the hull or deck in the flatter areas, if the two parts need to be coaxed into position.
On my just-started build here, I've moved the join line away from the 'natural' sheer line by about an inch, well into the flat sections of the hull. I'll let you all know how it works in a week or so.....
