Did you ever actually measure how much flex it has with and without? you can only do it during the build of course.
More or lot More doesn't really give you an idea of how much. A skin does help improve flex without a doubt.

The Yost Sea Tour 15 deflected 3/8" with no skin and 50# in the seat. It deflected 5/16" with skin and the same 50# in the seat. It was supported at the first and last frames on saw horses.

I have not built a break down kayak, so I am talking about one of Yost's wood frames from actual numbers.
Next time I will do it from just a collection of stringers, to an assembled frame, to skinned, to coated to get the compete story.
