Most of the time, the squeeze out is a bead of glue. I have several tongue depressors cut off square and sharpened to a chisel edge. I run one down the squeeze out bead before the glue hardens.

: 2. What to do with small gaps?

I do not use dookieschmutz (sawdust and epoxy). IMHO the finished product it is too dark. I use microballons and fairing filler in varying amounts to fill the gaps. It is much lighter than filling gaps with just epoxy resin. But, Robert is correct: improving your stripping technique will minimize the amount of filler needed.
