The glue is easy to remove, just keep a damp wash cloth handy and wipe off the glue as soon as you place your clamps.
The gaps can be filled but I suggest you practice your stripping skills while you finish the hull. By the time you get the to deck you will have improved greatly. Take time with each strip.
I have not found a suitable filler so I do not use any.
