Scott,
With a good "Rip" blade, like Freud manufactures you can easily cut 1/8 thin strips. Resawing on table saw is fairly easy if you set it up correctly. I use this setup regularly to resaw. http://www.woodmagazine.com/woodworking-plans/tablesaw/resawing-without-bandsaw/
If you have the money for a 6" wide benchtop jointer, that will come in handy for this job as well as many others. I suspect your difficulty will be in resawing boards that are as long as a ski. So use good fingerboards and a support table that is the height of the tablesaw and on which the stock can exit with drooping.
