: I've seen nylon skins and others with the toggle/deck rigging go
: through the skin + through the gunwales. I've got some excess
: plywood up at the stem that I'm fairly certain I could go
: through safely. I just can't envision how to put an attachment
: point through the stem for towing. Ideas? Thoughts?

Yup, just drill though the gunwales and plywood stem. Fish your cord through the hole and seal with Lexel or Marine GOOP. Quick, easy and more than strong enough.

I did that on my wife's Saco 13 SOF and on my girls' two SOFs. My wife's is the butterfly one. I built it this past spring... I need to announce that build. It has Bill H's composite Dacron skin with an outer coat of Vectracloth.
