Wooden Boat had a how-to on an edge-nailed daysailer a while back, and it was edge-nailed strips. I believe the planks were 1 1/4" thick, and there was plenty of interior support with gunwales, seats, thwarts, mast step, and centerboard assembly, yet the outside was still glassed. The drawback to your plan as far as I can see is that there would be nowhere for the nails to go unless your strips were extremely narrow or extremely thick, and then they'd probably need ribs for support. You would be adding a lot of detriment for the positive of not using glass. You can build a s+g plywood kayak without glass, so maybe you should look in that direction.
