It seems to me that adding glass to the OUTSIDE of the boat would be a lot easier than trying to glass the inside. On the outside, you have complete access for cleaning, sanding and glassing rather than trying to work in a tapered "tunnel". You probably only need to reinforce the hull from chine to chine and perhaps add a layer or two to the "football" on the bottom, which is the highest wear area. A keel strip might be a good idea, too. You may also want to reinforce the deck in key areas (aft deck right behind the seat and fore deck in front of the coaming), but this is pretty easy to do from the inside, since you're reinforcing relatively small areas.

As for the amount of weight it will add, that depends on the number and weight of the glass layers you add and how good you are at maximizing the glass-to-resin ratio. The latter should be easier to control if you're glassing the outside of the boat, as you can see everything and there isn't any place for the resin to puddle. If you keep your fill coats to a minimum, then use high-build primer before painting the hull, you'll get a smooth surface with minimal extra weight.
