Hi John,
You may consider building skin on frame. One that comes to mind is Dave Gentry's Chuckanut 15. He reports a very stable and easy paddle. I feel like you could be on the water in a couple of weeks with no problem. The strip build will take a good bit longer. I am sure you are well aware of that.
With a very young child aboard I also would stress stability and safty.
