I've done some work for just that idea, a SOF canoe. But I'm not fond of the look to a multi-chine canoe, so tried a part strip (turn of the chine) and part SOF and that works pretty well. (built a Yost Sea Bee that way) Would make a pretty canoe, assuming I ever have the time and is a heck of alot less work than building a full stripper canoe.

No problem making ply ribs but suspect you'll have to do like Dave did and make the center section reinforced to better support the upper part of the frame where it's unsupported as it would be in a kayak (no deck).
