The problems is more the type of wood than the thickness. WRC is a lousy bending wood. If you cut it thin enough, say ~1/8" it would be flexible enough to bend, but I doubt you'll get 3/8" WRC to bend enough for a coaming. As was mentioned above, you'd be much better off to find some oak or ash for your coaming stock.
