Seeking: Advice on Work Tables

Hi - I am a newbie and have been lurking for a couple of months ...

I will be building a stitch & glue kayak with my 13 yo son this Spring. We are both very excited to get started and are in the middle of the planning process. Can anyone give us some advice as to how wide our work table should be? We don't want a table that is too narrow but don't want to lean over too much either.

We were thinking of perhaps a 3 feet wide table made of 2 sheets of plywood or MDF on 3 saw horses. Any suggestions?
