Brian Ervin nailed the definition(for kayaks) pretty good. I've found that
combining deadrise (15 - 20 deg) with rocker ( 3 - 5in) creates a good
tracking / good turning hull. The "feeling" of initial instability disappeares
quickly with a little time in the boat.

Deadrise is more accurately described in degrees. A kayak with
2" of deadrise and hardchines 20 inches apart, has much less deadrise
(*10deg) than a kayak that has 2" of deadrise with chines 16 inches
apart (*15 deg). *Just estimates.
