My thought is for #1 above. I remember when I was taking a kayak class last spring, sitting in the kayak, on a calm flat spring day in lake union, feeling like I was about to go swimming any second now. It's not that your boat isnt tippy now, but think how well you will be when you do get used to it.

As for #2, if you can fill out the area from the center of the boat to one half inch below the current chine, something like that expanding 2-part foam.
then mold, pour and shape. then reglass. you can change teh under water shape of you boat. Downsides, expensive, timeconsuming, not really worth it, and not as durable, and you will probably end up sanding it off with in the year anyway.

As for #3, if you were to dado out a narrow (1") strip out of the middle of the boat, you could potentially glue that up together. problem is that the chine is already "set" to the angle that it is currnetly in, and changing that may induce stress fractures to the glass, if not now, than maybe when the boat heats up like when it's being cartopped or sitting in the sun.
you may be able to take a 3 or 4" strip out of the center of the boat and add a flat replacement strip, which will effectivly reduce the deadrise.

option #4 is to start building a new one that has all fo the fixes from the last one. then you can deligate youre current kayak to be a spare for a spouse/sibling/child/pet. just one small step closer to the dark side. with any luck you should be able to have seven or eight "spares" to explane before anyone notices.

BTW. having a flatter deadrise will make the boat turn better (when leaned) but track less.
