There's a lot of variation possible in even a highly traditional Greenland paddle.
: What else... this is the seal coat. It will get about 6oz of e-glass to help
: keep it together.
If you used waterproof glue to build it, consider not even using a coat of glass. Save weight.
I epoxy my paddles together, and have found I don't even like any finish on them. I always epoxied and sometimes even glassed my Euro paddles, and when someone first told me I might like an unfinished paddle, I scoffed at the thought.
After a use or two, most of the spring wood has raised, and a quick pass with 200-grit will make it super smooth, but grippy enough when wet.
Try it--you might like it!!

Unless your strips are very thin, it's not difficult to make it thinner.
