I used Freeship last winter for two designs and had quite good luck with the fit. I did however discover that the bottom panels were flipped end for end by the program when it did the development. It became very obvious as I wired it up that something was wrong. Once I re-did them the fit was right on. If you are concerned about exact sizes it is not hard to plane the edges a bit with a rolling bevel so that they meet more at the outside which accounts for the panel thickness and the changing angle at which they meet. I also modeled things with sharp points at the ends and enough extra length to end up with what I wanted after everything was given a reasonable radius. On a long skinny kayak you will probably end up cutting off 3 to 5 inches on each end if you don't want a lethal weapon. I found the easiest way to do this was to hold two sticks together at the right angle and just measure the distance from the point to where the radius seemed reasonable, then add this to the length of the model. Bear in mind that you will want to trim off a decreasing amount from the ends to 3-4 feet back along the keel to eliminate the sharp edge.

To get a feel for the developability check tools I found it useful to make a quick model of S&G that I had completed in the past and compare that to my admittedly vague memories of which areas were the most difficult.

As these were pretty curvy designs I made patterns with cheap luan to try it out on the first one:
