Take a look at:http://www.designovation.com/kayak/kayak_main.htm for more images (On the left choose steps 'Cockpit and Hatches' and 'Varnish Rigging and Seat' which show the mounting for a compass from Hamilton Marine on my second kayak).

Basically I cut a ring from redwood (any wood works), cut a hole in the deck, epoxied the ring in the hole, sanded, laid fiberglass over it, epoxied, varnished, and mounted compass to it. The compass comes with a gasket to make it watertight. It also has a wire to light it up - but I haven't hooked it up and the white on black markings are plenty visible anyway. The position is highly visible from the cockpit and by lacing the first holdowns on an angle it nestles in the center of the x where they cross. The compass is a Ritchie Kayaker that Hamilton has for $30 and it has worked great! (see suppliers link for their phone, link, and address)
