Two concerns that come to mind here:

How long did you let the epoxy cure before applying this pressure?

And, there has been some past concern about Oak working with epoxy. ( or against it ) Oak seems to have a chemical in it that has an adverse reaction to the epoxy and there's a question as to whether it will properly bond. Also, there was talk about cleaning the oak pieces with Acetone(?) to clean the wood for proper adhesion. ??? No scientific proof on my part, but rather group conjecture. You might test both ideas with some small pieces to be sure. Or wait 'til someone with previous experience pops in to help out a bit more. Hope that helps!
