If you are wondering what this yak is like, the S&G version will be in the review of kid's kayaks in the next issue of Sea Kayaker Magazine. Have no idea what they said about it, Good, Bad, or Ugly :) .

That said, there are numerous possibilities for a kid's boat in either S&G or strip-built. Looks like from the other posts, you already have several options. Don't be afraid to make a few modifications in existing plans. Most designs can handle small changes, and you can get all kinds of help on this BBS. Also, even rather small kids can handle surprisingly large boats, which they will grow into rapidly once they reach the lower teens (of course, in that age range peer pressure may lean them toward jet skies :( ). Also. don't let the strip building option scare you. A small yak goes together fairly rapidly.
