I apply 3 coats of epoxy and three coat of spar varnish to my paddles. The finish is tough and hard and takes a lot of abuse. No water absorbsion and a fresh coat of varnish hides a lot of sins.

Some people don't like handling the gloss finish, I do.
I find the grip very sure, not at all slippery.

Oil is not water proof and not my choice.
