I am not sure that you would find the ADK Guide Boat easier to build than a kayak. I some ways it is and in others it is not. The stripping is pretty straight forward. Just putting one strip next to another with a couple cheaters strips. There is no mitering of strips at the bottom due to the bottom board. The hollow sectional shapes can make it hard to keep some of the strips down, but not impossible.

But after stripping, there are the gunwales, end decks, and seats to install. Some of this work can be pretty fussy. You need to install some rib sections and and stringers for mounting the seats.

It is a relatively big boat and the seat and gunwales add to the weight. Since it is designed to be rowed it needs to be a little more solid than a canoe. I have not had a chance to row the one I helped Newfound Woodworks build so I really can't comment on its performance.
