I used the Bearboat(Mariner Kayaks)program to design the kayak I'm building now. It allows you to print out section forms using 8x11 paper then you tape them together to get full size forms. Watch for bugs when printing, if you find one, the designer will be very helpfull in correcting it. You do have to loft the end forms but I found this to be easy. I am very happy with the program and have two more yaks and a canoe I plan to build.
