Raised edges of seam tape can be quickly reduced using a block plane. Be sure to plane at an angle to the tape. This requires a little finese (sp) but cuts the edges of the tape nicely. This method acutually works better with edged tape than bias. The Guillemot has some pretty good curves at the seams, so you might still prefer bias tape in these areas.
