I agree with Paul:

My neighbor Adriaan is constructing a sailboat from 5083/5086 aluminum, which is the type used for salt water boats.

He has to pay attention to with welding sequences; if he goes in the wrong order, he gets severe warpage. This boat is constructed similarly to a stitch an glue: it has an eight-panel hull with bulkheads.

I think that there would be significant warpage issues in a sheet-only aluminum kayak. Paul's approach puts more meat at the weld.
