Sounds like Fir to me. It would definitely be tougher so work than Pine or Cedar. Yeh, that's basically a learn as you go situation. About the best you can do is cut it down and don't spend too much time sanding. It doesn't have to be perfect for the epoxy and glass.

Looks pretty darn good from here. Nice design from what shows in this view. I don't think anyone will notice a thousandth difference in a few pieces of wood. When that thing is all shined up, they won't even see it. Congrats on a fine looking boat. Good Luck!!
