We tried several materials and found that we like 5/8" ply-wood best. It wont break easily, is good in compression and tension, and is cheep when you don't care too much about the surface finish (and we don't). I'm building a Razor Billed Auk and my friend is building a Night Heron.

Good luck, but don't sweat it too much.
