I recommend a real end pour because it is structurally stronger. On several of my designs which have upswept ends it is impossible to get glass tape all the way to the end because the end is around the bend. The endpour serves to bond the deck to the hull at a point which can get a large amount of stress. A chunk of wood inserted in the hull does not accomplish the same thing. Some of my designs would require a block inserted into the deck as well

A couple ounces of epoxy with micro ballons does not weigh significantly more than the wood block set in thickened epoxy, but it serves as more than just a place to drill a hole.

I agree that the endpour is an awkward task, but it isn't very hard and, in the long run accomplishes more.
