I've built a CLC Chesapeake 17 and a Pygmy Osprey Standard. I mostly use the Chesapeake and my wife the Osprey. Both companies have great designs that can be built by novices (like me when I started) and provide great customer support. Here is what I like and don't like about each:

Chesapeake - a bigger, more stable boat (good for me because I use it for striper fishing a lot in fairly open water), slightly less time to build, the one piece curved deck was a pain to install, less attractive and less watertight hatches, plenty of excess glass and epoxy in the kit that allows for rookie mistakes

Osprey - smaller, lighter, more maneuverable (better recreational boat), better looking (compared side to side most people have told me that the Osprey looks better), better hatch design, slightly more expensive (including bulkheads), just enough glass and epoxy in the kit - no room for mistakes, cheap looking plastic deck fittings, the multipiece deck took a little longer to build but I don't hit my knuckles on it while paddling

What it comes down to is that there is no "perfect" boat. Pick one and build it. Then build more.
