This should be no problem. We have built up to 18' 7" using essentially the same offsets.

That particular photo is actually of an earlier version than present. I have since moved the cockpit a bit forward which has trimmed the bow about 1" lower and the stern about 1" higher (given just the paddler, you can achieve just about anything with cargo). These numbers are reflected in the CB on the offsets page. I would suggest lowering the side panels at the stern by between 1" and 1 1/2", your other numbers should be OK. The added length should give you plenty of extra buoyancy. What you see in the photo is 180# me and paddle plus 36# of yak, if this helps.

I will build a cambered fwd deck and a near flat aft deck. I

One thing to note on this design. The shape of the keel produces a shallow, almost skeg-like stern which really tracks (at least in my opinion ;>)). The effect of this essentially disappears when it is leaned. Guess if you had one to test paddle you could get a better idea of where you wanted to go with this. Guess you are too far away. BTW don't worry about offending me. Play with the design all you want. If you come up with something that works good, let me know.

Puffin offsets are sitting here. Just been too busy to put them up. Will try to get at that. Hope this helps.
