I would go for the Guillemot. Choosing it's lightweight configuration (which depends basically on the glass cloth you apply to her) you could get a light, beautiful boat.

I STRONGLY recommend you Nick's book. It's a must for anyone who wants to build a stripper for the first time.

This bulletin board can help you every step of the way, too.

Go for it! She will take you time and money (like every "she" I know...) but, like all of us, once in the water you'll see that she worth the pain (not like every "she" I knew...).

Building the boat is basically following simple steps, requiring very little woodworking skills and almost no dedicated tools. But you MUST be obsessive with this simple steps. The time you think you can save in one step could mean spending (or waisting) lots of hours in the next step.
