Newbie seeking advice on which model

Greetings all!

I'm a pretty competent (canoe) paddler, with kayak experience limited to sit-on-tops, (Necky Dolphin -- lot of rocker for a SOT, but I liked it). Looking at building a strip 'yak and seeking suggestions. I know it'll take longer than the S&G, but the beauty is worth it. I'm very comfortable with a low initial stability as long as the secondary is there and tracking isn't too bad.

I'm 5'9, 150#, shoe size 8.5. Looking to paddle on (mostly) slow, flat, Florida rivers with occasional trips to the ocean for limited time while at the beach. I might do the (rare) 2 day trip, but mostly up and down the river in a day, ('m guessing 15 footish?)

AND, I'm looking for something *really* light weight -- I've got a bad knee, (difficult to walk some days), and I'd like to car top it by myself.

Okay, that's about my life story. More expensive woods, kevlar, building lighter to my (somewhat) smaller size are all open to consideration.
