Epoxy at 40 degrees

Lee - Just starting to glue together the panels for my Merganser. I'm using butt joints with 6oz glass on each side. I'm using RAKA epoxy with their fast hardener, and my garage is averaging in the low 40's (outside in Indiana is currently in single digits). No problems with flow. Items covered with black plastic are hardening within 24 hours, but items exposed, without cover or pressure, are taking about 48 hours just to get tack-free. My problem is with air bubbles. I'm using extra epoxy to go ahead an start sealing the panels, but using both brush or squeege, I'm getting alot of air bubbles.

Also, as stated above, the joints are covered with a heavy piece of black plastic. When cured the joint is very smoooth and no bubbles; but I can not see the weave in the 'glass. Am I using too much epoxy? I know that this is different than covering the entire hull, but I don't want to use too much, if it's not necessary.
