I like 'Sea Kayaker' and 'Wooden Boat'. There is also 'Canoe and Kayak'. 'Wooden Boat' is helpful for learning about building in general, and 'Sea Kayaker' talks about kayaking in general and building on occasion. I have seen reviews of Pygmy and CLC kayaks in it. They have also published plans for building different kayaks.

Go to your local library, I found a wealth of information on building, design, theory, and techniques. My local library has a better selection than all the book superstores in my area combined. It is a great way to find out what books you want to buy and always have on hand for reference.
