Fritjof, When I built my Guillimont I used surf board leash fittings from a company called O'fish'l ( I think that's how it spelled) in Southern California. They are simular to the one's you've found but completely flush. I drilled a 7/8" hole in the deck with a forester bit and inserted the fitting from the back, set in epoxy. Worked like a charm, no leaks and completely flush. I think they come in two sizes, the one I used was 7/8" overall. I know they have one that's larger. They come in black and white and the rod is brass. I bought mine thru Monterey Bay Fiberglass in Santa Cruz, CA. (831) 476-7464. The best part is they were cheap. I paid about a $1. each.
