If you want to sand by hand, wrap the sandpaper around a sanding block or a spare block of wood. If you want to use a power sander, random orbital sanders are greak for kayak work. I'd use 100 or 120 grit which will remove material slowly, but will prevent making any big mistakes too fast. The finish left by the sandpaper should be fine for 'glassing over.

If the epoxy is hard enough to have it's structural strength you should be safe without gloves.
