I was in your shoes few weeks ago. I searched the phonebook & found a place that rents kayaks. I went there & rented a plastic boat for a day. I also asked for the length & width of the boat I rented. on a different day I tried another kayak & I also asked to sit in a few kayaks. I did all that @ "waterways kayaks" in florida. they where nice & patient for all my weired questions. I learned what is a bad seat & I also learned what do I actually intend to do with a kayak. on another day I went to a kayak show in key largo. I tried few boats & I was shocked to realize that the important width (for me) is @ the toes & not @ the hips. I wanted a 20-22" wide boat, but I learned that I'll not have enough space to move my feet, & I must move my feet all the time, I can't sit in the same position more than 30 sec.

another thing to do is surf (or perhaps keep surfing)the web, check all the manufacturers. get a "sea kayaker" magazine & check the ads

I ordered a coho 2 days ago & hope to get it sometime next week. why did I picked the coho ?! it's more than 23" wide & besides that I think it's just as good (bad) as any other kayak. nobody could tell me: pick THIS kayak & not the other ! I'll let you know if it was a bad choice. If it's a good choice, than I'll not waste my time on the net, I'll be paddling.
