I started with exactly the same product and technique and got the same sags. I found that the foam just layed it on too thick. I switched to a badger brush and thinned the varnish a bit and was fine from then on. Here's a link to a tip-page with some varnishing notes (at the very bottom). This guy uses foam brushes, but is able to achieve a sag-less finish.
