Thin even coats and lots and lots and lots of patience.

I used V-Spar Flagship varnish on a canoe I built last summer. I found that if I thinned the varnish about 10% with mineral spirits that it flowed on better with fewer runs. After I applied the varnish to an area I tipped it off ONCE with long even LIGHT strokes to get as even a coat as possible. Good light is really critical so you can catch those run before the varnish starts to set.
