A little of this depends on the final finish you are looking for. What I have done is to sand down to a reasonable thickness (not quite into the glass) then re-epoxy a couple of thin layers, resand, re-epoxy, etc. until it is the finsh you are looking for.

This can be a lot of extra work that will go to waste depending on how you will use the kayak. If you will use it roughly, you will scratch things up quickly and all the work will be just that...a lot of work.
