I also had this problem occur on the hull of my Chesapeake 16. Even after the forth coat, with the surface epoxy smooth, the weave was visible from certain angles. I used MAS cold cure and blame the result on the epoxy being too hot for the initial coat, as it was a warm day (around 60 F). I varnished the boat anyway, and think it looks great for a first time effort. You can always paint it if you can't stand the varnished results.
