I fitted a similar boat with a windsurfer skeg box. This allows removing the skeg when it is not wanted. I bolted the skeg box to a plywood backing plate and epoxied the plate to the inside of the hull. It tracks wonderfully, but the skeg is a nuisance in shallow water and when launching/landing. If your boat doesn't have bulkheads, you will need to get flotation bags or a sea sock. Considering the bother and expense, you might be happier getting a proper sea kayak to begin with.
