I suggest you take a look at CLC plans for Mill Creek 16 wich is a kind of open kakayak ( Example at http://www.udel.edu/CRJU/dgulick/kayak.htm) or at their Tred Avon Double ( Example used to be at http://olympus.net/personal/sbaxter/build.htm). These boats should go together in less than 100 hrs.

Note: I'm not working for CLC, I just like their boats.
