It's already done, and you are putting it on the water, so there's no point worrying, is there? I think the main problem will be the durability. Don't rub or scuff it on anything. You know how to get into the kayak when it's in the water, right? You don't get into a skin-on-frame on the shore an slide it in.

Given a choice I'd use Rustoleum over anything latex.
