Polycarbonate doesn't glue well. I would think that would be a consideration. Also, you will have condensation issues. there were times paddling in cool/cold weather when paddling in my SOF and the skin was much thinner and obviously got colder than a wood skinned kayak I would get so much condensation on the inside after a while it would rain on my legs. I would imagine it wouldn't take much to fog up a PC kayak.
