It's not paint, it doesn't self level like paint. A bit of an orange peel effect is pretty normal. I'd suggest reading Rob Mack's guide on his Laughing Loon site, if you want it to be nearly perfect the shop has to be hot.
I just put up with the effect and wet sand the finish after it's hardened completely. Then a few coats of varnish and it's ready to launch.

The final finish isn't epoxy, it's varnish, that self levels.
