Usually the coaming is made from hardwoods, they bend better. Cedar is pretty brittle. 1/8" thich works fine.

Or, you could use eT's method with plywood and strips (matching the deck pattern) overlaid..lots of possibilities, since the strength can come from glass laminated over, if necessary.
